
Butter Corn Rice Recipe
Butter corn rice is a one-pot dish made with sweet corn, rice, seasonings, and butter. It's easy, delicious, and the perfect summer recipe!
Ingredients
- 2 sweet corn on the cob about 1 1/2 cups
- 1 1/2 cups rice short-grain or medium grain rice
- 1 1/2 cups water
- 1 tbsp soy sauce
- 1 1/2 tbsp mirin
- 2-3 tbsp unsalted butter
- pinch of salt
- pinch of ground black pepper
Instructions
- Using a knife, cut off the corn kernels from the cob and measure approximately 1 1/2 cups. Can be substituted with canned corn.
- Wash and rinse the rice until the water runs clear. Place the rice into a donabe or pot.
- To the pot, add water, mirin, a pinch of salt, and mix well. Carefully layer the corn on top of the rice. Optional – add the cobs on top for more flavor.
- Cover with a lid, then bring to a boil. Reduce the heat to low and cook for 12 minutes. Turn off the heat and allow the rice to steam for 10 minutes undisturbed.
- Add butter and ground black pepper on top. Mix well, serve, and enjoy!
