
Chili Oil Egg Breakfast Tostadas
Ingredients
- 2 whole eggs
- 2 tbsp chili oil divided
- 2 corn tortillas substitute with pre-made tostadas
- 1/2 cup neutral oil avocado, corn, canola, vegetable
- sliced avocado for garnish
- pickled red onions for garnish
- cilantro for garnish
- Oaxaca cheese for garnish
Instructions
Tostadas *If using pre-made tostadas, skip this section*
- Add neutral oil to a small pan then heat over medium-heat to 350F.
- Carefully place a corn tortilla into the hot oil then use a pair of chopsticks to submerge the tortilla for even frying. Fry for 45 to 60 seconds on each side or until golden brown. Set aside on a cooling rack and sprinkle salt on top.
Chili Oil Egg
- Add 1 tbsp of chili oil then crack 1 egg into the pan.
- Using a spatula or wooden spoon, baste the egg with the hot chili oil until the egg has set.
Assemble
- Place a chili oil fried egg on top of a tostada.
- Garnish with sliced avocado, pickled red onions, cilantro, Oaxaca cheese, plus your favorite garnishes.
- Serve and enjoy!
