Tostadas *If using pre-made tostadas, skip this section*
Add neutral oil to a small pan then heat over medium-heat to 350F.
Carefully place a corn tortilla into the hot oil then use a pair of chopsticks to submerge the tortilla for even frying. Fry for 45 to 60 seconds on each side or until golden brown. Set aside on a cooling rack and sprinkle salt on top.
Chili Oil Egg
Add 1 tbsp of chili oil then crack 1 egg into the pan.
Using a spatula or wooden spoon, baste the egg with the hot chili oil until the egg has set.
Assemble
Place a chili oil fried egg on top of a tostada.
Garnish with sliced avocado, pickled red onions, cilantro, Oaxaca cheese, plus your favorite garnishes.
